Hollandaise Sauce

1/2 cup heavy cream
4 large egg yolks
1-1/2 tbsp lime or lemon juice (I prefer lime)
1 tsp dijon mustard
3-4 dashes of cayenne pepper
1/2 cup butter
salt & pepper
